Cajun Blackened Cod with Asparagus

Ingredients
  

  • 2 tilapia or cod fillets 5-6 oz each
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp Cajun seasoning
  • ½ tsp salt
  • 1 bunch asparagus trimmed
  • ¼ cup broth vegetable, chicken, or water
  • ¼ cup Greek yogurt
  • 1 tsp lemon juice
  • Pinch of salt and pepper for drizzle

Instructions
 

  • Pat fillets dry. Coat both sides with Cajun seasoning and salt.
  • Heat olive oil and butter in a skillet over medium-high. Add fish and sear 3-4 minutes without touching to form a blackened crust.
  • Flip fillets. Add asparagus around the fish and let it blister for 2-3 minutes.
  • Pour in broth and cover. Steam 2-3 minutes until fish flakes and asparagus is crisp-tender.
  • Mix Greek yogurt, lemon juice, salt, and pepper for the drizzle.
  • Plate fish and asparagus. Spoon yogurt drizzle over top or serve on the side.

Notes

Macros per serving: 45g protein | 14g fat | 6g carbs | 320 calories. Works equally well with tilapia. Don't touch the fish while searing — let the crust form naturally.
