Mediterranean Pork Tenderloin with Roasted Red Peppers & Herb Gremolata

This Mediterranean pork tenderloin is one of those recipes that looks like you spent all day in the kitchen — and takes about 40 minutes. A warm spice rub, a proper sear, and a silky roasted red pepper sauce do most of the heavy lifting. The lemon herb gremolata at the end is the kind of finishing touch that makes people ask for the recipe.

Yes, this one has pork — we’re mostly pescatarian around here, but a great Mediterranean pork tenderloin deserves a place on the blog. It’s high-protein, genuinely impressive for guests, and the leftovers are outstanding. According to Healthline, pork tenderloin is one of the leanest cuts of meat available — comparable to chicken breast in protein and fat content.

The sauce is the real star here. Roasted red peppers blended with white wine and chicken stock creates something velvety and deeply savoury that works beautifully under the sliced pork.

Mediterranean Pork Tenderloin with Roasted Red Peppers & Herb Gremolata
Ingredients
- 2 pork tenderloins about 1 lb each
- 3 roasted red peppers jarred or fresh-roasted, roughly chopped
- 4 tbsp olive oil
- 4 garlic cloves minced
- 1 shallot finely diced
- â…“ cup dry white wine
- ½ cup chicken stock
- 1½ tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- ½ tsp ground coriander
- â…“ tsp crushed red pepper flakes
- 1½ tsp salt
- ½ tsp black pepper
- â…“ cup fresh flat-leaf parsley finely chopped
- 2 tbsp fresh mint leaves finely chopped
- 1 lemon zested and juiced
- 2 tbsp capers drained
- â…“ cup Kalamata olives pitted and halved
- â…“ cup feta cheese crumbled (for garnish)
Instructions
- Combine smoked paprika, cumin, oregano, coriander, red pepper flakes, salt, and pepper. Rub 3 tbsp olive oil over the pork tenderloins then coat generously with the spice mixture. Rest at room temperature while oven preheats.
- Preheat oven to 425°F (220°C). Place a large oven-safe skillet over high heat until very hot.
- Add remaining 1 tbsp olive oil to the hot skillet. Sear tenderloins 2-3 minutes per side until a deep golden crust forms.
- Transfer skillet to oven and roast until internal temperature reaches 145°F (63°C). Remove, tent loosely with foil, and rest 5-10 minutes.
- While pork roasts, sauté shallot in the same skillet over medium heat until soft, about 3 minutes. Add garlic and cook 1 minute. Deglaze with white wine, scraping up browned bits. Add roasted red peppers and chicken stock and simmer 5 minutes.
- Blend the pepper mixture until silky smooth. Return to pan, stir in capers and olives, season to taste, and keep warm over low heat.
- Toss parsley, mint, and lemon zest and juice together for the gremolata.
- Spoon red pepper sauce onto plates. Slice pork into medallions and arrange over sauce. Top with gremolata and crumbled feta. Serve immediately.

Tips for Perfect Mediterranean Pork Tenderloin
Pat the pork completely dry before applying the spice rub — this is the single most important step for getting a proper sear. Any surface moisture will steam the meat instead of browning it and you’ll lose that gorgeous crust.

Don’t skip the resting time after roasting. Tenting the pork loosely with foil for 5-10 minutes lets the juices redistribute — slice it too early and they run straight out onto the board.

If you have time, marinate the pork in the fridge for up to 4 hours for deeper flavour — though it’s excellent even without the extra marinating time.
Serving Ideas for Mediterranean Pork Tenderloin
This Mediterranean pork tenderloin works beautifully over herbed couscous or roasted potatoes to soak up the red pepper sauce. A simple arugula salad dressed with lemon and olive oil alongside cuts through the richness perfectly. Warm flatbread for mopping up the sauce is non-negotiable.
